Lately, I’ve been trying to find recipes that will finish up items we have had in the pantry or freezer for waaayyy to long. In addition, I always seem to have bananas on the brink of spoiling, and you can only have so many containers of frozen banana for smoothies before it starts to get ridiculous. Damir keeps buying bananas, and I’ve concluded that his ultimate goal is for me to make banana bread, which it turns out he loves. In this week’s roundup, there are TWO banana recipes, both are absolutely fantastic.

Unbelievably Moist Banana Bread
This is a rockstar recipe from Forks n’ Flip Flops that has forever changed my banana bread game. And for her tip of letting the batter rest… it DOES make a difference! I split the recipe in half and baked one half right away, the other as instructed. The one that rested was far more moist. This is now my go to recipe, and Damir will nearly eat the whole pan in one sitting.
Chicken Parm Stuffed Peppers
We had some frozen breaded chicken patties in our freezer that had been there for far too long, and this was a great way to use them up! I think the overall recipe was pretty good, but i just wasn’t impressed with the chicken we had… which is likely why it had taken up a permanent residence in the freezer. This recipe from Delish was a great way to finally finish it and make more room.
Deconstructed Pizza Casserole
This recipe from Kayln’s Kitchen was almost perfect. The flavor was fantastic, but it was a little meat heavy for my taste. I plan to make it again, but this time with more vegetables (peppers, onions), double the mushrooms, and a little bit of marinara sauce. Overall, great meal!
Banana Blondies
These bars from Life in the Lofthouse were so addicting! I brought half the pan into the office, and they were gone before lunch! I did skip her brown sugar frosting and instead used up some white frosting I had in my pantry, but these will absolutely be making a comeback in my kitchen.
