You may recall that I have had my struggles with weight and had success on Weight Watchers. Well, that success has been a few years past and I kind of (big time actually) fell off the wagon. So when I re-joined Weight Watchers just over a week ago, I was super excited to make my favorite recipe… Spicy Black Bean Soup. Yes, I know I could have made it even without being on the program, but just hadn’t gotten around to it. But now that I am back on plan, it was time.
But no joke, I ate this for 4 days in a row, often twice a day. It was incredibly filling, and I didn’t get sick of it even once…. its that good. And super easy to make!
A few personal preferences to the original recipe:
- I up it to at least 1.5 onions. I love onion.
- I also used 5 cloves of garlic instead of 4.
- If you like heat, use a 10 oz can of tomatoes without chilies, and use a 4.5 oz can of just chilies in addition.
- In the instructions, it asks you to blend the second can of beans as well, but I prefer more full beans in my soup, so I only blend about half of can 2, leaving the rest of the beans whole and adding them directly into the pot as you do with can 3.
